Grilled Elote and Quinoa Salad
Serves 4
INGREDIENTS
- 3 ears corn on the cob, grilled
- oil if needed, to grill
- 1 cup quinoa, cooked per instructions
- 1 can black beans, rinsed
- 1 jalapeno, diced
- 1 tomato, diced
- 1/2 red onion, finely diced
- 1 avocado
- 1/4 cup Cotija cheese
- 1/4 cup cilantro, chopped
- 1/4 cup sour cream
Dressing:
- 1/2 cup mayonnaise
- 2 limes, juiced and zested
- 1 clove garlic, grated
- 1 teaspoon chili powder
- 1/2 to 1 teaspoon salt
DIRECTIONS
- Using grill pan or outdoor grill, grill corn until slightly charred, cool and remove from cob.
- Prep all other ingredients, as listed.
- Whisk the dressing ingredients until smooth.
- In a medium size bowl toss quinoa, corn, beans, jalapeno, tomato and onion with the dressing. Garnish with avocado, cotija, cilantro and a dollop of sour cream right in the middle.
