Bacon Fat Chocolate Chip Cookies
Makes 3 dozen cookies
INGREDIENTS
- 1 cup cold butter, cubed
- 2 tbsp. room temperature bacon fat
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp. salt
- 1 tsp. vanilla
- 2 1/2 cups all-purpose flour
- 1/2 tsp. baking soda
- 2 cups chocolate chip cookies
DIRECTIONS
- Preheat oven to 375 degrees fahrenheit.
- In a stand mixer: cream the butter, bacon fat, brown sugar, and sugar.
- Mix in the eggs, one at a time, then add the salt and vanilla.
- Add the flour and baking soda, mix until dough forms.
- Fold in the chocolate chips.
- Spoon the dough by rounded tablespoon onto three parchment lined baking sheets. Bake for 12-16 minutes until just barely golden on the edges. Remove and let cool on baking sheets before removing to wire rack.
