Mexican Hot Chocolate Cookies
Ingredients:
1 cup softened butter
1 ½ cups granulated sugar
2 whole eggs
1 teaspoon vanilla
½ cup Dutch cocoa powder
2 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
¼ cup cinnamon sugar
Instructions:
- Preheat oven to 325 degrees. Line a baking sheet pan with parchment paper.
- Using a stand mixer or hand mixer, beat butter and sugar until pale yellow and fluffy.
- Add eggs one at a time, beating in between each addition. Scrape down sides of the bowl, add vanilla, and mix again.
- In a separate mixing bowl, combine cocoa, flour, baking soda, baking powder, and salt. Add one third to butter mixture and mix on low until combine. Continue adding in thirds until dry mix is finished.
- Scoop two tablespoons of dough at a time, roll into a ball, coat in cinnamon sugar mix, and place on prepared baking sheet. Do not flatten cookies.
- Continue shaping cookies this way and place cookies 3×4 on baking sheet until dough is finished.
- Place in preheated oven and bake for 10-12 minutes. Let cool slightly and enjoy!
