Lemon & Pine Nut Biscotti
Ingredients:
¼ cup light olive oil, plus extra for shaping
¾ cup granulated sugar
2 eggs
1 lemon, zested
¼ teaspoon lemon oil or 1 teaspoon lemon extract
1 ¾ cups all-purpose flour
¼ teaspoon salt
1 teaspoon baking powder
½ cup toasted pine nuts
1 cup white chocolate chips
Instructions:
- Preheat the oven to 300 degrees. In a large bowl, combine oil and sugar and mix until thoroughly blended. Beat in eggs. Add lemon zest and lemon oil or extract.
- Add flour, salt, and baking powder. Whisk until just combined.
- Combine pine nuts and white chocolate together in a small bowl and gently fold into biscotti batter.
- Divide dough in half. Form two (12 by 2-inch) logs on a lined baking sheet. If dough is sticky, rub hands with olive oil or cold water. Bake for 35 minutes, or until logs are light brown.
- Remove from oven, and set aside to cool for 10 minutes. Reduce oven temperature to 275 degrees. Cut logs on the bias into 3/4-inch-thick slices. Lay biscotti on their sides on a lined baking sheet. Bake approximately 8 to 10 more minutes (flip biscotti to other side halfway through baking the second time) to dry them out. Cool completely and enjoy!
