Lemon & Pine Nut Biscotti

Ingredients:

¼ cup light olive oil, plus extra for shaping
¾ cup granulated sugar
2 eggs
1 lemon, zested
¼ teaspoon lemon oil or 1 teaspoon lemon extract
1 ¾ cups all-purpose flour
¼ teaspoon salt
1 teaspoon baking powder
½ cup toasted pine nuts
1 cup white chocolate chips

Instructions:

  1. Preheat the oven to 300 degrees. In a large bowl, combine oil and sugar and mix until thoroughly blended. Beat in eggs. Add lemon zest and lemon oil or extract.
  2. Add flour, salt, and baking powder. Whisk until just combined.
  3. Combine pine nuts and white chocolate together in a small bowl and gently fold into biscotti batter.
  4. Divide dough in half. Form two (12 by 2-inch) logs on a lined baking sheet. If dough is sticky, rub hands with olive oil or cold water. Bake for 35 minutes, or until logs are light brown.
  5. Remove from oven, and set aside to cool for 10 minutes. Reduce oven temperature to 275 degrees. Cut logs on the bias into 3/4-inch-thick slices. Lay biscotti on their sides on a lined baking sheet. Bake approximately 8 to 10 more minutes (flip biscotti to other side halfway through baking the second time) to dry them out. Cool completely and enjoy!

  • Upon arrival, you will sign in and have your temperature taken at the front desk. Any guests with a temperature over 100 degrees will be asked to go home.
  • You will be required to wear a face mask and gloves during the prep and cooking segments of class. You will be allowed to remove your face mask once you are seated at a dining table.
  • Please wash your hands upon arrival and after touching your phone, your face, door handles, and other surfaces outside of the kitchen.
