Instant Pot Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 (20 ounce) can crushed pineapple
1/4 cup brown sugar
1/4 cup soy sauce
2 tablespoons cornstarch
2 tablespoons warm water
Instructions:
1. Place frozen chicken, pineapple, brown sugar, and soy sauce in Instant Pot. Place lid on Instant pot, press manual, and set time to 25 minutes.
2. Once chicken is finished, turn knob on lid from seal to vent to vent steam and release pressure. Once all steam is released, remove lid and set chicken breasts aside on a cutting board.
3. In a small bowl, whisk together cornstarch and warm water to make a slurry. Once mixture is smooth, add to cooking liquid in Instant Pot and whisk until dissolved and liquid thickens slightly.
4. Using to large forks, shred chicken and return to cooking liquid in Instant Pot. Stir to coat chicken in sauce and serve.
