½ cup butter, softened
¾ cup granulated sugar
2 whole eggs, room temperature
1 tablespoon espresso powder
1 teaspoon vanilla
1 cup + 2 tablespoons all-purpose flour
½ cup cocoa powder
1 teaspoon salt
½ teaspoon baking soda
½ cup whole milk or ½ cup sour cream
Instructions:
1. Preheat oven to 350 degrees. Line a 9×5 inch loaf pan with parchment paper and lightly grease.
2. Using a stand mixer or hand mixer, beat butter and sugar until pale yellow and fluffy.
3. Add eggs one at a time, beating in between each addition. Mix extract and espresso powder and add to egg mixture. Mix to combine.
4. In a large mixing bowl, whisk flour, cocoa, salt and baking soda. Add 1/3 dry ingredients to mixer and mix until combined. Add ¼ cup milk or sour cream and mix until combined. Continue alternating dry mix and milk until both are finished and just combined.

6. Once cake is finished, let cool slightly and enjoy as is or top with chocolate ganache!
