Mediterranean Pasta Salad
Ingredients:
1 1/2 cups fusilli or rotini pasta
1 1/2 teaspoons dijon mustard
2 tablespoons mayonnaise
1/4 cup red wine vinegar
1/2 cup olive oil
2 tablespoons minced herbs (parsley, oregano, chives, etc.)
1/2 red onion, diced
1 red bell pepper, diced
1/2 cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup kalamata olives, pitted
1/2 cup feta cheese, crumbled
Salt and pepper, to taste
Instructions:
1. Bring a large pot of water to a boil. Add 1-2 tablespoons salt. Add pasta and cook for 10-12 minutes, or until pasta is al dente and cooked to your liking.
2. While pasta cooks, make vinaigrette. In a mixing bowl, whisk together mustard, mayonnaise, and red wine vinegar. Continue whisking and slowly drizzle in olive oil. Continue to whisk vigorously as you add oil slowly to create and emulsion. Add herbs and season to taste with salt and pepper.
3. Add diced onion, pepper, cucumber, and tomato to vinaigrette and toss to combine. Let vegetables marinate until pasta is finished cooking and cooling.
4. Check pasta and drain if finished cooking. Toss with a little olive oil to keep from sticking and let cool completely.
5. Once pasta is cool, add marinated vegetables, vinaigrette, olives and feta, and toss to combine. Season to taste with salt and pepper and enjoy!
