Lemon Curd
Ingredients:
1 ½ cups sugar
2 whole eggs
4 egg yolks
1 cup freshly squeezed lemon juice
4 tablespoons butter
½ teaspoon salt
Instructions:
- Combine sugar, whole eggs, and egg yolks in a saucepot and whisk to combine.
- Add lemon juice and whisk again. Place saucepot over medium-low heat and whisk occasionally.
- Add butter and whisk. Add salt and whisk. Continue to cook until curd reaches 170 degrees.
- Once lemon curd is 170 degrees, or thick enough to coat the back of a spoon, pour into a bowl and cover with plastic wrap. Press plastic wrap down to meet the top of the lemon curd.
- Chill lemon curd in refrigerator for at least 1-2 hours or overnight and enjoy!
