Ingredients:
1/4 cup fat (turkey fat from drippings plus butter if there is not enough fat)
1/4 cup all-purpose flour
2 cups turkey drippings (add water or stock to supplement if necessary)
1 teaspoon soy sauce (optional)
Kosher salt and black pepper, to taste
Instructions:
- Strain turkey drippings through a fine mesh sieve. Separate drippings from fat and set both aside.
- Measure out 2 tablespoons fat and put in a small pot. Melt fat (along with butter, if using) oven medium-low heat and then add equal parts flour. Whisk to combine and then cook about 1-2 minutes while whisking.
- Bring drippings (along with water/stock, if using) to a boil in a separate pot. Add 1-2 teaspoons of roux in and whisk. Continue adding roux and whisking, a few teaspoons at a time, until gravy reaches desired consistency.
- Reduce heat, season gravy with soy sauce (optional) and salt and pepper to taste. Enjoy!
