Traditional Basil Pesto
Ingredients:
1 clove garlic
½ teaspoon kosher salt
4 cups fresh basil
1/3 cup toasted pine nuts
1/2 cup olive oil
1/2 cup grated parmesan cheese
Instructions:
1. Using a mortar and pestle, make garlic and salt into a paste. Add basil and work into a chunky paste with garlic.
2. Add toasted pine nuts and work into chunky paste using pestle.
3. Add oil, a few tablespoons at a time, and work into the basil paste a little at a time with pestle.
4. Add cheese, switch to a spoon or silicone spatula and stir in so that you do not break up the cheese too much. Enjoy!
