Poached Pears

Ingredients:

12 semi-ripe pears, peeled
1/2 gallon orange juice
2 bottles red wine
1 cup sugar
1 whole orange, quartered
2 cinnamon sticks
1 teaspoon whole cloves

Instructions:

  1. Combine orange juice and red wine in a large pot. Add sugar, orange, cinnamon, and clove. Bring to a simmer over medium-high heat and let the sugar dissolve.
  2. Add peeled pears to poaching liquid. Very gently simmer for 7-8 minutes and the flip pears over so that the are colored on all sides. Poach another 6-7 minutes.
  3. Once pears are tender and have taken on some color from the poaching liquid, remove pears and set aside to cool slightly.
  4. Serve pears warm, cooled, or chill them for later.

  • Upon arrival, you will sign in and have your temperature taken at the front desk. Any guests with a temperature over 100 degrees will be asked to go home.
  • You will be required to wear a face mask and gloves during the prep and cooking segments of class. You will be allowed to remove your face mask once you are seated at a dining table.
  • Please wash your hands upon arrival and after touching your phone, your face, door handles, and other surfaces outside of the kitchen.
