Béchamel Sauce
Ingredients:
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups whole milk, warmed
Salt, pepper, and other seasonings (to taste)
Instructions:
1. Melt butter in a heavy-bottomed sauce pan over medium heat.
2. Once butter is melted, add flour and whisk. Continue whisking until butter and flour form a roux. It will look like a paste, begin to bubble, and turn golden in color. Do not let roux become too brown.
3. Slowly pour in warm milk while whisking. Whisk continuously until roux and milk are fully combined. Bring mixture to a simmer and then reduce heat slightly, cooking another 2-3 minutes or until sauce becomes thick enough to lightly coat the back of a spoon.
4. Season to taste with salt and pepper. Other seasonings that are good for a white sauce are a small amount of freshly ground nutmeg or even garlic powder.
