Homemade Gnocchi
Ingredients:
2 cups baked and riced potatoes
2 cups all-purpose flour, plus extra for shaping gnocchi
1 teaspoon salt
2 egg yolks
Instructions:
1. Place riced potatoes on clean work surface.
2. Add salt to flour and whisk to combine.
3. Dust riced potatoes with salt and flour mixture. Carefully toss to coat potato pieces with flour. Bring flour-coated potato pieces together in a mound and make a well in the center.
4. Whisk together egg yolks and pour into well. Slowly start incorporating flour and potato mixture, pulling from the outside in, into the well. Keep working from the outside in, pulling more and more flour and potato mixture into the well.
5. Continue working mixture gently until a dough start to form. Carefully shape dough into a ball, wrap with plastic wrap, and let rest for at least 30 minutes.
6. While dough rests, clean work surface so that you will be ready to shape dough and bring a large pot of heavily salted water to a boil.
7. Once dough has rested, roll into one large log and cut into 6-8 smaller pieces. Take each piece and gently roll into one long, one inch thick, log (like you are making a play-doh snake). Continue this process until all dough is rolled out.
8. Cut each one inch log into 1-inch pieces to form the gnocchi. Set these aside of a flour dusted sheet pan until all gnocchi are cut and ready to cook.
9. Drop about one cup of gnocchi into boiling water, but not all of them at once. They should have plenty of room to move around and not stick to one another. Do not stir.
10. Once gnocchi float to the top, cook for one additional minute, remove them with a slotted spoon or spider, and set aside on a clean sheet pan or plate while you continue to cook the remaining gnocchi.
11. Once gnocchi are cooked, warm them in your favorite sauce and enjoy.
