Handmade Pasta
Ingredients:
2 cups all-purpose flour, plus extra for dusting
1 tablespoon salt
3 whole eggs
1-2 tablespoons water or olive oil
Instructions:
- Combine all-purpose flour and salt in a bowl and whisk to combine. Pour flour on to clean work surface and shape into a mound. Make a well in the center of the flour.
- In a separate bowl, whisk together eggs. Add eggs to well and slowly being to incorporate flour, starting from the outside edges of the mound and working towards the center. Add a little water or oil if dough is too dry and having difficulty coming together.
- Knead dough 5-8 minutes, until it is smooth and supple. Cover with plastic wrap and let rest for 30 minutes.
- Unwrap dough. Dust dough and work surface with extra flour as needed to keep dough from becoming sticky.
- Roll out dough with a rolling pin until 1/8th inch thick. Flour dough, fold into quarters, and cut folded dough to create noodles. The farther you space your cuts from one another, the wider the noodles will be. Continue rolling and cutting pasta until dough is finished.
- Bring water to a boil in a large pot. Heavily salt water.
- Add pasta to boiling water. Cook pasta until tender but not mushy, 2 to 6 minutes depending on thickness. Taste every 2 minutes or so to cook to desired doneness.
- Drain immediately and toss with your favorite sauce. Mangia!
