Creamy Garlic Hummus
Ingredients:
1 cup dried chickpeas, soaked overnight and drained
½ teaspoon baking soda
4 cloves garlic, chopped
2 lemons, halved and juiced
¼ cup tahini
2 tablespoons olive oil, plus 1 tablespoon for garnish
¾ teaspoon salt, or more to taste
¼ teaspoon chili powder
¼ teaspoon chili flakes
1 bell pepper, sliced, for serving
Instructions:
- Combine drained chickpeas with baking soda in a medium pot and cover with water. Bring to a simmer over medium-high heat and cook until chickpeas are very soft, about 30-35 minutes. Drain chickpeas and save cooking liquid in a bowl. Set aside.
- Place chickpeas in a blender or food processor. Add garlic, lemon, tahini and olive oil to chickpeas and blend. Process until smooth, adding leftover chickpea cooking liquid as necessary. Blend to desired smoothness and consistency. Add salt and blend once more. Taste and adjust seasoning if necessary.
- Place hummus in a shallow plate or bowl. Using the back of a spoon, swirl hummus to create a shallow spiral in the hummus and drizzle with remaining tablespoon olive oil.
- Sprinkle chili powder and chili flakes over hummus and enjoy with freshly sliced bell peppers for snacking!
