Homemade Hamburger Buns
Ingredients:
3 1/2 cups all-purpose flour
1 tablespoon instant yeast
1/4 cup granulated sugar
1 1/2 teaspoons salt
1 to 1 1/2 cups warm water OR 1 cup water plus 1 egg (for a brioche bun)
1 egg plus 1 tablespoon of water OR oil, for brushing
2 tablespoons sesame seeds, for topping
Instructions:
1. In a large mixing bowl or bowl of a stand mixer, combine flour, instant yeast, sugar, and salt. Mix so that dry ingredients are combined.
2. Add 1 cup warm water and mix until a shaggy dough starts to form. If there is a lot of excess flour in the bowl, add a little more water and mix again. Note *If you are using 1 cup water plus 1 egg to make a brioche bun, you will likely not need to add extra water because of the moisture from the egg*
3. Once a rough, shaggy dough begins to form move dough to counter and knead by hand or place bowl on stand mixer and knead with a dough hook for 3-5 minutes, or until a smooth dough begins to form.
4. Gently shape into a ball, place in a bowl twice the size of the dough (so that dough has room to expand) and let rise in a warm place for about 1 hour, or until doubled in size.
5. After dough has doubled in size, remove from bowl, place on counter, and divide into eight equal pieces. Note *To make slider size buns, divide dough into 12 equal pieces*
6. Shape each piece into a small ball, place on a parchment lined baking sheet, and gently press flat. Continue this process until all dough has been shaped into buns. Cover loosely with plastic wrap and let rise a second time for about 1 hour, or until noticeably puffy.
7. After 30 minutes into the second rise, preheat the oven to 375 degrees.
8. Once buns have risen a second time, brush with egg wash or oil and top with sesame seeds. Bake in preheated oven for 15-18 minutes, or until golden brown.
9. Let cool at least 10 minutes before slicing in half and enjoy!
