Super Fudgy Mexican Brownies
Ingredients:
1 cup butter, melted
2/3 cup dutch process cocoa powder
2 cups granulated sugar
4 whole eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon chili powder
1/4 – 1/2 teaspoon cayenne
Instructions:
- Preheat oven to 350 degrees. Line a square baking dish with parchment paper and spray with non-stick cooking spray.
- In a medium size pot over medium-low to medium heat. Melt butter.
- Turn off heat and add sugar and cocoa powder. Whisk to combine. Mixture may look a little bit sandy, that’s ok.
- Transfer butter mixture into a large mixing bowl. Combine eggs and vanilla in a small bowl. Whisk egg and vanilla mixture into butter mixture, one at a time, making sure they are fully incorporated in between each addition.
- In a separate bowl, combine flour, baking powder, salt and spices. Add half to butter and egg mixture and whisk to combine. Add remaining half of flour mixture and mix again.
- Pour batter into prepared baking dish and bake in preheated oven 25-30 minutes.
- Brownies should pull aways slightly from the sides of the pan when finished baking. A toothpick inserted into the center may not necessarily come out clean because these brownies are super fudgy.
- Let brownies cool completely before slicing. For easy, clean cuts, refrigerate brownies before slicing. Enjoy!
