Soft Pretzels
Ingredients:
4 cups all purpose flour
1 tablespoon yeast
1 tablespoon sugar
1 tablespoon salt
1 1/2-2 cups warm water
8 additional cups water
8 additional cups water
1/2 cup baking soda
Melted butter, for brushing
Flaky salt, for sprinkling
Instructions:
- Place flour, yeast, sugar, and salt in the bowl of a stand mixer with dough hook attachment. Add 1 1/2 cups warm water and mix. Add additional water, if necessary, until a dough ball begins to form. Knead on medium speed for 2-3 minutes.
- Transfer to counter to continue kneading by hand and carefully shape into a dough ball. Place in a bowl with enough extra space that dough can double in size. Cover with plastic wrap or a damp towel and let rise until doubled in size, about 30 minutes.
- Preheat oven to 400 degrees. Line 2 baking sheets with parchment paper. Bring 8 cups of water to a boil and add baking soda.
- Once dough has doubled in size, transfer to counter to shape into pretzels. With a sharp knife, cut dough into roughly 1/3 cup sections, about the size of a tennis ball. Roll each section into a 20 inch rope. Bring the ends of the rope towards each other to form a circle. Twist the ends and then bring them down towards you and press them down onto the bottom of the circle to make a pretzel shape. Repeat with remaining dough.
- Drop pretzels into boiling baking soda bath for 20-30 seconds and then remove with a slotted spoon, spider or spatula. This step is optional, but makes for a chewier, more traditional tasting pretzel!
- Place pretzels onto prepared baking sheet. Sprinkle with salt and bake for 12-15 minutes or until golden brown. Remove from oven and serve warm.
