Meringues
- 280 grams aged egg whites
- 1/4 teaspoon (pinch) salt
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon flavoring (optional)
- 400 grams granulated sugar
- Food coloring (optional)
- In the bowl of a stand mixer fitted with the whisk attachment, combine egg whites, salt, vanilla, and any flavoring you would like. Mix until eggs are frothy.
- Once eggs are frothy, add sugar, a little at a time while the mixer is still running. Once all the sugar is added, whisk at maximum speed until hard peaks form or you can hold the bowl upside down over your head and it won’t fall out!
- Fold in food coloring (if using) and the use meringue on top of a pie. To make baked meringues, continue to step 4.
- Place meringue in a piping bag with a star tip. Pipe shapes on to a parchment lined baking sheet. Bake in a preheated oven on the middle rack at 225 degrees for one hour.
- Turn oven off and leave meringues in oven for 2 hours while oven cools to aid in drying them out. Use baked meringues as decorations or eat them like cookies!
