2 cups blueberries
1/2 cup sugar
1/4 cup water
1 (2 inch) piece peeled ginger
1 large sprig basil
Salt, to taste
- Combine blueberries, sugar, and water in a pot over medium low heat.
- Add whole piece of ginger, a sprig of basil, and a pinch of salt. Simmer lightly for about 5-10 minutes. Once reduced and blueberry juices have thicken slightly, remove from heat.
- Remove whole piece of ginger and sprig of basil. Transfer to a heat safe container and store in refrigerator for about one week.
